Banana Bread with Oat Flour Chocolate & Cinnamon Sugar

Yes I make my banana bread in a square pan. Almost always. How else are you going to get the maximum possible sugar crunch to bread ratio? Trust me. This is the way.

This is possibly my all time favourite banana bread. It’s super soft and moist and loaded with cinnamon, chocolate and pecans. And that cinnamon sugar topping? Don’t leave it out. It really makes it perfect. 👌🏻

Recipe-ish:

4 very ripe bananas
1/2 cup melted butter
2 eggs
1 cup dark brown sugar
2 tsp vanilla
1 cup oat flour
1/2 cup flour (whole wheat pastry or all purpose)
1 Tbsp baking powder
1/2 tsp salt
3 tsp cinnamon, divided
1/2 cup
1/2 cup chopped pecans*
2 Tbsp coarse sugar
2 Tbsp mini chocolate chips

In a large bowl mash the bananas.
Add in the butter, eggs, brown sugar and vanilla.
In a separate bowl mix together the flours, baking powder, salt and 2 tsp cinnamon. Mix well.
Add the flour mixture into the banana mixture and mix just until combined.
Fold in the chocolate chips and the pecans.
Pour the batter into a greased and/or lined 8×8 baking pan.
Mix together the coarse sugar and 1 tsp cinnamon. Sprinkle evenly over the batter.
Sprinkle the mini chocolate chips over the batter.
Bake at 350 for about 50 minutes.
