Golden Beets with Dried Cherries, Walnuts, Goat Cheese and Tarragon Vinaigrette

Friends, I know you may not want to hear this, but we still have to get some veggies in during the holiday season.
Cookie season is about to begin for some of us… Others of us already have four different kinds of cookies on the counter. 😬😬😬

Also, healthy or not, this dish is one of the best things I’ve eaten in a long time.

Recipe-ish:

Chop 4-5 medium sized golden beets, toss them with 2 Tbsp olive oil, 1 Tbsp honey, 1 Tbsp lemon juice and 1 tsp kosher salt. Cover and roast them at 375 for about an hour.

Place 1/2 cup dried cherries in a bowl and cover with boiling water. Let sit for 10 minutes. Drain and set aside.

Brown 1/4 cup butter. Pour into a bowl and whisk in 1 small minced garlic clove, 1 Tbsp white balsamic, 1 Tbsp honey and 1 tsp dried tarragon.

Remove the beets from the oven and pour over the dressing. Then add in the dried cherries along with 1/2 cup toasted chopped walnuts, 1/3 cup crumbled goat cheese and a big pinch each S&P. Toss and serve.
