Last Minute Lasagna

I keep hearing talk of people serving lasagna at Thanksgiving. Is that a thing? I’m Canadian and I have never once in my life seen lasagna served at Thanksgiving, but the more I hear about it the more I believe we have clearly been missing out and doing it all wrong and we must make it a thing!! But I don’t want to add more work to the big day and so…

This is the easiest lasagna in the world. Oven ready noodles, easy sauce, all the cheese… boom!

Recipe-ish:

Gather together:
3 cups marinara sauce (I just blended up some of my slow roasted tomatoes – search “Balsamic Roasted Tomatoes” on my website)
2 cups ricotta cheese mixed with 1/4 cup chopped sundried tomatoes and 1 egg.
*option to mix 1/4 cup mashed roasted garlic into the ricotta too.
4 cups grated mozzarella.
1 box oven ready lasagna noodles

Grab a 9×13” baking dish and start layering like this:
Sauce.
Noodles.
Ricotta.
Mozzarella.
Repeat twice.
Cover and bake at 375
For 45 minutes.
Uncover and bake another 10 minutes.
