This Lemon Ricotta Pasta has a sauce that is ready BEFORE your pasta is done. No joke friends, you can be eating this in 10 minutes… and it is soooooooo good. Creamy, cheesy and bright. I make this all the time. I’ve even made this for my kids for breakfast. 🙃
You can throw in whatever veggies you like (asparagus? broccoli?) but we eat it like this with my signature arugula salad on the side. 😎

Recept-achtig:

Get your pasta cooking in salted water.
In a large bowl mix together: ricotta cheese (I used about 2 cups for 1 lb pasta), zest of one lemon, juice of half a lemon, big pinch of garlic powder (or fresh garlic, but we’re going for speed here!), freshly ground black pepper, chopped fresh basil (or parsley if you don’t have basil… I’ve even used dried basil and it’s worked well), pinch of salt.
When the pasta is cooked use tongs to scoop it into your bowl (you don’t even have to drain it!) along with about 1/4-1/2 cup pasta water. Mix thoroughly, adding more pasta water if needed. Top with more fresh basil, if you like.
