Peppermint Mocha Sugar Cookie Brownie Bars
I am fully addicted to Peppermint Mochas during the holidays so these easy to make gooey, fudgy bars that live somewhere between a cookie and a brownie are my attempt to get more peppermint mocha into my life. And it’s working.
Loaded with chocolate, espresso and topped with a candy cane crunch they are to die for. They’re also ridiculously easy to make.
1 cup flour
1/3 cup cocoa
1 tsp baking powder
1/2 tsp salt
1 Tbsp instant espresso powder
1/2 cup butter
1 cup chocolate chips
1/2 cup dark brown sugar
1/4 cup sugar
2 tsp vanilla
1/2 + 1 Tbsp cup crushed candy canes
1 Tbsp sprinkles
Mix together the flour, cocoa, baking powder and salt.
Melt the butter and chocolate chips together and whisk until smooth and combined. Cool slightly.
Add the sugars to the butter and mix well.
Add the egg and vanilla to the butter mixture. Mix well.
Pour the flour mixture into the butter mixture and mix until combined.
Fold in 1/2 cup crushed candy canes.
Pour batter into a greased or lined 8”x8” baking dish.
Top with 1 Tbsp crushed candy canes and sprinkles.
Bake at 350 fro 25-30 minutes.
